Happy Friday...
Today I am sharing I quick and easy recipe, to make cookies!
Ingredients
75g (3oz) butter - softened
75g (3oz) caster sugar
75g (3oz) soft light brown sugar
1 medium egg
1 teaspoon vanilla essence
175g (6oz) plain flour
1/2 teaspoon baking powder
100g (4oz) chocolate drops
Method.
1. Heat the oven to 180oC , 350oF.
2. Use a paper towel to wipe a little oil over two baking trays.
3. Add both types of sugar together in a bowl, then add the butter, mix until the mixture is smooth and creamy.
4. In a small bowl break the egg and beat it well with a fork.
5. Add the vanilla essence to the egg, add this mixture to the large bowl. Stirring well.
6. Sift in the flour and baking powder, stir the mixture until it is smooth.
7. Add the chocolate drops ( save some to sprinkle on top)
8. Mix together.
9. Put a heaped teaspoon of the mixture onto the prepared baking trays.
10. Leave space in between each heap.
11. Flatten each cookie with the back of the fork and sprinkle the saved chocolate drops on top !
12. Bake in the oven for 10 - 15 minutes or until they are golden brown.
13. Leave to cool
